Thinking about buying a 1" dowel, putting two hooks at the end and suspending is between the passenger handles in my back seat to create a rolling closet. It will only be used temporarily but will probably hold an entire closets worth of stuff.

I've pulled pretty hard on the handles and they seem secured into the frame. What do you think?

Yeah the oh **** handles are held into the pillars with bolts. Are you moving and trying to keep some suits from wrinkling or something? Might be better off laying them flat. If nothing else, your blind spot visibility will be gone.

Ya moving cross country . It's not a ton of stuff, really. 5 suits, 5 sport coats, probably 30 shirts. I can't stand ironing and don't want to take everything to the cleaner. Visibility will be shot either way because if I don't hang the stuff I'm gonna pile up the back seat anyways.

my mom does it all the time. we've had a little chunk of pipe hung up from the handles in the back seat in many of her cars, including the '82 Jetta, '92 Legacy, and '01 Legacy. Works very well.

I think you should install a full roll cage and then go buy a bunch of lead shirts and hang them on the cage.
