you should narrow it down to a 01-02 forester s, they have rear disc brakes and color matched trim and a giant moon roof. would be easier to make it nice once you start building it. i had to go to chicago to find mine though and at the time there were none around with a 5spd

why dont you get a 90-94 legacy wagon and swap your engine in there. that way alot of your parts will continue to fit. orr, swap that ish into a BD wagon. or sedan
