Trip report? They've been on my radar for quite a while and never quite make the cut. Can you narrow it to a country/cuisine? There's a fair bit of stuff in the Eagan/Apple Valley/Burnsville area.
Worst. Food. Evar. I tried it with the Mrs. exactly once several years ago. She got a "veggie burrito" that consisted of a can of carrot coins in what looked to be gravy, wrapped in a tortilla. I got fajitas that appeared to have been cooked in a can of coke and enough salt to cause second hand renal failure. Rarely have I been that insulted by a plate of "food" placed in front of me. Never again. *Note I did my years in service industry. It's hard to actually piss me off to the point of being offended as a customer. You have to actively try to get it wrong. They tried, hard.

We just got back from Scuzi in St. Paul on St. Clair. Excellent italian food. And not the usual red sauce + meat + spaghetti fare either. Seriously, best italian meal I've had in a long time.
Thanks for all the suggestions! My girl ended up feeling sick and we didn't even go out. Buffalo tap has some good burgers and cheese curds.
Yeah, the fiance's family and I go there pretty frequently. Love the buffalo burgers and wings! Their "house tap" is so-so...
Sorry, their wine selection, and the Summit Saga on tap has me a bit on the fuzzy side. Scusi, not Scuzi or Scuzzy. It's excellent though.

Speaking of places with sodium bombed food...this one tops the list. I'm not familiar with Eagan restaurants, but there are of course a ton of very goos places in Minneapolis and St. Paul. All depends on what you want and how "fancy."
