What's are your brewing plans for the weekend? I am going to open one of the Liberty Cream Ale's to see how it's doing, and if I have time, I'm going to try to make that Simcoe IPA. My drunken fishing league buddies drank just about all of my California Common last wednesday night.
I just found out my old college roommate is coming out for our friends wedding. Looks like I'm brewing this weekend. I don't think it will be done in 4 weeks, but I can try!
You know it! :biggrin: I guess if I really wanted to I could take all those bottles of finnegans, dump them into my keg, throw some co2 on it and have from the bottle from the keg keg beer. lol.
RIGHT ON!!! My wife is going to ApplianceSmart this afternoon to look for a good deal on a scratch and dent full size, fridge,freezer combo for the garage. Brew stuff on the bottom, freezer overflow on top. Blamo!
Dude, having a man fridge is where it's at. You all saw my picture of my man fridge above. The wife has givin me the OK to have an additional keg fridge if I can find one for a good deal.
What extract kit to get? I'm brewing a batch with a buddy of mine on Sunday and need to get a kit today or tomorrow. Which kit would you suggest. Here are the kits that I've done so far: Irish Red Ale, California Common, Liberty Cream Ale, Simcoe IPA, and a Imperial Stout. Suggestions? Favorites? Anyting you've always wanted to brew but never done - I'll give you some feedback. :cheers2: Edit. I was going to say, I just got an e-mail from northern brewer about 2 minutes ago.. Here's one of their limit release kits.. Waldo Lake Amber - from Denny Conn, this above-average American Amber Ale has a wonderful malt-hop interplay and uses the 1450 Denny's Favorite 50 yeast. Sounds like a nice summer brew. btw. Just bottled my Boundary Waters Wheat on Monday. Tasted good out of the bottling bucket thats for sure. Should be ready to drink in 2 weeks, gotta drink them wheat beers young, from what I hear anyway. Hop Scare looks like a good pick. My next kit will be the Honey Bee Ale at the wifes request. This will be my second time brewing it and it turned out excellent the first go at it. Id also highly recommend the Surly Furious clone Ferocious. Can't go wrong with that IPA. Also cooking up a strawberry Mead recipe with a co worker tomorrow afternoon, should be a fun new experience with an even longer/more painful aging period.8-12+ months, ouch.
I'll be brewing on Sunday morning as well. A good buddy of mine from high school who has been into it since EARLY college is driving out west and bringing his 10 gallon kettle and O2 tank. I've not seen him since my wedding which was 3 years ago so that will be fun. Then, it's laundry and packing for Portland the following week. We're going on at least one brewery tour while we are out there. Paul, is that surly clone at Midwest?
Heres what I'll be brewing tomarrow. I'm goint to get the stuff at Midwest in about an hour. Also going to do a yeast starter this time. 7# Munich malt 2# German 2 row 2# German vienna 1# American victory 1/2# cara pils 1/2# rye 1 ounce Hallertau @ 60 1 ounce East kent goldings @ 15 1 ounce Tettnang @ 5 70 minute, 6 gallon boil for a 5 gallon batch. 1056 wyeast ale yeast. Since I dont have enough ttime to lager it for it to be ready by September.

Not quite. It's a full size, fully functional fridge freezer combo!!! PLENTY of room for my Cornelius kegs and bottles and still room to lager a carboy!!! WOO HOOO! Congrats on the cones, Paul! I just bottled that Simcoe IPA last night. It had a lot of setiment from those hops. :biggrin:
Awsome! Sounds like a perfect fridge. Only 6 or so bottles remaining of my Simcoe, they'll be missed. Plans for home grown cascade is an orange/cascade pale ale hop bomb! this will have 2-3oz dry hop Be sure to save hop sediment for spreading on yer toast :yumyum:
*** If any of you are VERY serious and can solidly confirm that they want a full size working fridge and can pick it up on Saturday (7/25/09) from the lake-minnetonka area, my buddy is getting a new fridge delivered and will have one for free. It works fine it's just older and he recently moved into a new place. Best Buy will take this old one when they deliver the new one and the last thing he wants to do is be stuck with the old one, so whoever picks it up must not be a friggin flake or Best Buy will haul it off. let me know ASAP.
Cascade Hops! Cones are starting to form! Looks like my first year plant will produce afterall. Time to start gathering cascade recipes. Have a cascade/orange pale ale in mind :yumyum: If you have any cascade heavy recipes shoot them my way. Extract recipes only though as I am not quite ready for all grain. Might possibly try a partial mash recipe though.
Tried one of my Simcoe IPA's yesteray. Two words: :yumyum: There is a fair amount of sediment in the bottles from the dry hopping.
Nice. But i'm surprised there is sediment in the bottles. Actual hop sediment or yeast? I used a strainer bag when racking from the secondary to bottling bucket and had a thin yeast layer at the bottom of the bottles and that was about it. Popped a third rocky pale ale bottle last night and it actually had a bit of carbonation after 4 weeks in the bottle. Not sure what is taking so long but hoping it should be ready to drink in another couple weeks. Decent tasting pale ale but not the hop bomb the Simcoe was thats for sure.

It tastes good and I was able to keep the crap out of the glass so I don't mind.
My father in law, who is from a VERY small, midwestern American town and doesn't eat any food other than "American" food, tried some of my homebrew tonight while he was over helping me rip out the tile floor in my entry way. I explained to him that my Simcoe IPA was a fairly bitter but fruity beer that wasn't "dark" but was not a "light" beer either. He was excited to try it. One sip, he shook his head and "That's way too much... um... no thanks. Man, that's brutal..." :laugh::laugh::laugh: so I got to enjoy both pints that I poured.

Doing my first SMaSH beer today. (single malt and single hop) Picked up 12 lbs of MN grown Rahr 2-row 3 ounces Cascade 1056 yeast Specs according to beer calculus: Original Gravity 1.065 Final Gravity 1.016 43.1 IBU Alcohol 6.5% A.B.V. This is inspired by a simcoe smash I had out in Halifax Nova Scotia a few days ago. Best Ipa I've ever had, it blew the top off of Furious.
Hop Harvest! Harvested my 1st year Cascade Hop plant on Sunday night and just finished up bagging the dried goods this evening. Wet weight- 4.04 lbs. Dry weight- 12.2 oz. Lots of recipes floating around in my head already :yumyum:
I wasn't planning on using them right away and they need to be dried to store. What do you do? This is my first plant/harvest so if you have any advice let me know.
Just acquired Midwests Ferocious clone but waiting to brew it till I get my brew cart assembled. O so close to full boils.
It all depends on what you want to brew I guess. For me, I use them right away after picking. There is a blasting of flavors coming from a fresh cone, with huge aroma. You can also freeze them if you dont want to dry them right away. I recommend trying the Sierra Nevada Harvest ale. They use the cones right off the vines without drying. The oils are still in the cone and add a big boost in flavors and aroma. The flavors are explosive. But with that, you will want to consume the beer as fresh as possible. The hop flavors will diminish after a couple months. After 6 to 8 months most of the fresh wet cone flavors will be lost.
That kit is really good. The dry hopping is huge. I recommend useing an extra muslin bag to dry hop with. It will give you much more clarity in the end result. I used the bag I dry hoped with to dry hop a 2nd beer. The hops still had quite a bit of aroma left in them. I did a partial mash with the extract kit. I acidentally used to much grains and got my abv to 9% lol. It was an intoxicating brew.
Awesome! Local HomeBrewers! I am mostly a Partial Mash Kitchen brewer. Then putting most of my beers in Kegs. I have a mini-fridge kegerator and a traveling keg cooler. We should have a Beerfest! I have a Marzen in my basement just waiting to be enjoyed. I also have some hops growing, Cascade and Fuggle, not quite ready yet but pretty close. I will put up some pics as well.
Thanks for the info xBrian. I'll have to grab some of that Sierra Nevada Harvest and give it a go. Next year i'll have to brew fresh off the bine, sounds so delicious. Right now i've got this for a recipe with half of my cascade harvest. Hoping it turns out something like a Two Heart Ale- 6lb gold/light lme 1lb light dme 6 oz homegrown cascade steeping grains- 1lb of crystal 40L US-05 hop schedule 60 min- 1.5 or 2 oz. 10 min- 1 oz. 0 min- .5 oz. Dry hop- 3 oz. Drocnoc-Have any pics of yer hops? pbedroske-what type of mead you bottling? I've got an orange raspberry and a strawberry bulk aging at the moment.
The hop schedule looks great. Thats gonna be a good hoppy brew. I will gladly drink all of your beer! I brewed today, through tornado's sirens and all. Got a little nervous that the power was gonna go out and I would have to dump it all though. Sirens starting blasting half way through the mashing of the first runnings. It's my first try at mead, so it's just straight up honey mead. I've heard they're very difficult -they're not except for the waiting. I'm just hoping it didn't get infected after 9 months in fermentors.

Does anyone have any experience with "how long is too long to leave dry hop on the beer?" Because my life has been so hectic and insanely busy, I finally got to bottle a batch that I brewed about a month-and-a-half ago. I put in about 1/2 to 3/4oz of dry hop and it sat there for about 2 weeks until I could finally bottle it, yesterday.
I think your beer is ruined and you should just drop it by my place and i'll dispose of the toxic fluid safely :yumyum: From everything i've read you should be fine. 10-17 seems to be the norm with a month being max before you'd start to notice vegetable flavors of sorts. What did ya dry hop?
