Not looking at upgrading till I need to, but was wondering:

Does the OEM sti 6 speed still have trouble getting into 1st when rolling like the 5mt does?
Same Q for PPG 5spd rebuild.

I'm leaning towards ppg rebuild, but if the 6spd is a little easier to shift, I might consider to go that route.

Yes the 6mt does not allow you to go into first unless you do a little rev match. It really doesn't matter since it is sooooo short that it really isn't good for a whole lot, imo.

The 6mt shifts smoother due to it's multiple cone syncros on each gear. '06 and later have an improved design that offers more longevity. My '05 6mt could use a freshening.

Don't down shift into first. Every car I have driven does not like going into first when rolling. Except a Viper. But there first gears are long.

I knew someone was going to say that...
Personally, I like being able to get back into 1st when I pull into a parking lot, or stuck in traffic jams, or not being able to stop due to craptastic 02' abs performance.
My econobox ford aspire could get into 1st easily at virtually any speed you could imagine wanting to.tt
I really would like to be able to get back into 1st...if you ever had to drive a 2 liter, had to slow down to 10mph or so, and then accellerate, you would want to get back into 1st too.

I don't really ever downshift into first, but my 06 goes into first no problems, just double clutch and match the revs.

SubeN'Siren, I don't think you will find a Subaru transmission that will allow to just bang it into first when you're rolling. My suggestion would be that you research what type of gearbox best fits your driving style and requirements.

Fuji recently posted a great writeup here.

The POS Renault Scenic I had to use when we first moved here would shift into first no problems.

Mine shifts into first no problems with a double-clutching.... Every subaru I've driven is the same.

Even my prehistoric 200k mile 5mt slips into first no problem, just as long as the tires arent sliding.

You are not alone, I'm also sick of having to rev match it into first all the time. I drive a 2.0 with a VF34 and it takes forever to get from 10 to 20 mph in second. I'm always rev matching it into first at low speed... seemed to me that the two 6-speeds I drove were a lot better at this (and shifting in general) but maybe it was just those two.

the 6spd is a better transmission for sure, i regularily jam mine back into first during rallyx without issue (need to rev match obviously).

Rev match, dopple klutch or not my 02 WRX would zap me trying to go into 1st whilst rolling. My 07 WRX will let me slide into 1st with rev match up to 30mph...never tried at a higher MPH. Personally, I'd go 5spd PPG over a STi 6MT or other swappage.
